Races (semi confirmed) are:
Hyuran (human)
Lalafell (taru)
Roegadyn (galka)
Miqo'te (mithra)
Elzen (Elvaan)
We also get some job categories:
In the Fighter category, we have: swordmaster, archer
In the Magician category, we have: enchanter, warlock (some variations to the names in this category.)
In the Crafter category, we have: blacksmith, cook
In the Gatherer category, we have: gardener, fisherman
We also get hints that the character customisation will be very detailed (head, skin tone, hair type, etc) so much so, that Square are worried that it may be a cause for concern for the players, having so much to choose from!
There are also some rumours flying about but Im too lazy to type them now, so enjoy what you're given!

EDITED BY DEIM: Thanks for the information again Kaze! I've been busy with some other website stuff but I'll stick this as an announcement and tack it on with the latest news post:
New information has been released from Square Enix on some much anticipated topics regarding Final Fantasy XIV. We hope this will feed that aching hunger you've been feeling for weeks now! Square Enix discusses the world of Final Fantasy XIV and it's three city-states: Ul'dah, Limsa Lominsa, and Gridania as well as the races of Eorzea: The Elezen, The Lalafell, The Hyur, The Roegadyn, and The Miqo'te! Of course the races share striking similarities with those of Vana'diel in FFXI, however from the artwork that's online, it appears the city-states also slightly resemble some of the architecture and landscape of Eorzea's predecessor. Perhaps we will all come to know and love this magical new world as much as the fond memories many of us have of Vana'diel.
All of this information and more can be found on Square Enix's newly updated Final Fantasy XIV site located at http://na.finalfantasyxiv.com/! Please feel free to discuss this and more on our Community Forum!
